Rhubarb Crumble


Topping:
1 cup flour
1/3 cup oats
3/4 cup brown sugar
1/2 cup chopped nuts
pinch of salt
6TBS unsalted butter, melted

Combine the dry ingredients together and then pour the melted butter over it.  Stir to combine.  Set aside.

Filling:
2lbs chopped rhubarb
1/3 cup sugar
1/4 cup flour
1/2tsp vanilla extract
1/4tsp salt
1/4tsp ground cinnamon

Toss together the filling ingredients and then place in an 8-by-8-inch baking pan.  Scatter the topping on top and bake in a preheated 375 degree F oven until golden and bubbly, about 45 minutes.  Let cool 15 minutes; serve with fresh vanilla whip cream or vanilla ice cream.
